What's For Dinner?
Recipe for a Happy Father's Day By Allison H. McAlister
Heat oven to 350 degrees F. In a large bowl, combine ground beef, breadcrumbs and egg; mix well. In a medium bowl, combine all remaining ingredients; mix well. Add 3/4 cup of the salsa mixture to meat mixture; mix well.
In an ungreased 2-quart casserole or a 9x5-inch loaf pan, shape meat mixture into a loaf. Bake at 350 degrees F for 50 minutes. Remove meat loaf from oven.
Spoon remaining salsa mixture over top of loaf. Return to oven and bake an additional 30 minutes or until thoroughly cooked in center and meat thermometer registers 160 degrees F. Cheesy Mashed Potatoes
This recipe was a huge hit with my family, especially with my young daughter,
who simply adores cheese. Easy to prepare, these homemade mashed potatoes are a perfect accompaniment to the meatloaf.

Ingredients: Peel potatoes and cut in quarters. Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat. Continue to boil until potatoes are fork tender, about 15 to 20 minutes. Drain potatoes and mash. Stir in butter, sour cream, salt and pepper. Stir in cheese just until mixed. Serve immediately or place potatoes in a heated serving dish. Cover and keep warm in oven until ready to serve. |
